Sexy Stuffed Apricots

these are a fantastic cocktail party finger food.  so easy to put together and believe me, your guests will be impressed with how sophisticated and pretty this dish is, and how well the flavors go together.  i found these on hogwash and loved that jess thomson appropriately describes them as an ’almost-instant sexy party food’.  the original recipe called for blue cheese, but i thought gorgonzola would go better and so i used that instead.  this is definitely a keeper!

just take some nice ripe apricots, cut in half and remove pits.

stuff each with cheese. top with pistachios. drizzle with honey.
