I was so excited that the NYTimes Recipes for Health theme for this week is mushrooms, which remind me a lot of Christmas! Our Christmas Eve dinner dishes are vegetarian and many rely on the rich flavors of mushrooms for their deliciousness. I like the variety of the recipes presented this week & am dying to make these Stuffed Portabellas with Swiss Chard.
