Eggs Poached in Tomato Sauce

I was so excited to see Straub’s selling this Dean & Deluca tomato sauce.  It reminded me of being back on the east coast so I really couldn’t resist picking some up.  I didn’t just want to do the same old pasta thing with it, so I decided to mix up our weekend brunch routine and used it to poach our eggs.  We loved how easy this was and how tangy and spicy the flavors were.  All we did was warm up the sauce (about a cup), cracked the eggs into it (we made 4) and sprinkled generously with goat cheese.  We covered it up for 2-3 minutes just until the egg whites came together and spooned it over some toast and fresh spinach. You can use any tomato sauce and cheese combination you’ve already got for this Italian inspired meal!
